Recommendations for Reducing the Risks Associated with Take-Out Food and Doggy Bags

In a recent survey sponsored by the American Dietetic Assoc. and ConAgra Foods, 75% of consumers indicated that it would be helpful is restaurants provided proper reheating and storage instructions for doggy bags and take-out orders. According to the survey, close to 70% of Americans eat at restaurants at least once a week, 57% of which is take-out orders. Some 90% of restaurant patrons get doggy bags at least occasionally and 32% do so regularly.

To help consumers guard against foodborne illness, Randolph County Health Department suggests the following:

  1. Refrigerate restaurant leftovers within two hours of eating the meal.
    When outdoor temperatures reach 90° and above, limit that time to one hour.
  2. Label and date restaurant food and eat within 3-4 days.
  3. Use a refrigerator thermometer to be sure the appliance cools to below 40° F.
  4. Reheat restaurant leftovers to 165° F.
  5. Use a meat thermometer to assure doneness and help maintain good taste.
  6. Lastly, don't forget to wash your hands often, keep raw meats and ready-to-eat foods separate, cook to proper temperatures and refrigerate promptly to below 40° F.
